     Ingredients for Making Chicken Jalfrezi

          For the sauce

    •  Half a large onion, chopped
    •  2 garlic cloves, minced
    •  One green chili, finely chopped
    •  oil for frying
    •  400 gr of natural crushed tomato
    •  A tablespoon of ground coriander
    •  A teaspoon of turmeric
    •  A tablespoon of ground cumin

          For the meat and vegetables:

    • 750 gr. chicken breast, chopped
    • A teaspoon of ground cumin
    • A teaspoon of ground coriander
    • A teaspoon of turmeric
    • 1/2 large onion, julienne
    • A chopped red bell pepper
    • 2 red chilies finely chopped
    • 2 teaspoons of garam masala
    • chopped fresh coriander
    • Water

           For the rice garnish:

    • Basmati rice to taste
    • chopped fresh coriander

     Cooking method 

      To make this chicken Jalfrezi recipe follow these steps, 

          Step: 1,  MARINATION

    •  Place the chicken breast pieces in a container. Top it with cumin, coriander and a teaspoon of turmeric. Put them into the refrigerator until use. 

          Step: 2,  COOKING

    •  Heat some oil in a saucepan. Add the minced garlic cloves, the green chili, and half of the chopped onion. Cook for three to five minutes over medium heat.
    •  Add 300 ml water and cook over low heat for 15 to 20 minutes.

         Step: 3,  MAKING SAUCE

    •  In the meanwhile, heat some oil in another saucepan and saute one tablespoon of coriander, cumin, and turmeric for approximately a minute. Add crushed tomato and cook over low heat for about 10 minutes.
    • In a food processor or blender, combine the two preparations; blend and cook over low heat for 20 minutes.

         Step: 4,  MIXING  

    •  Fry the reserved chicken in the fridge in vegetable oil, stirring continuously. Following a couple of moments, bring down the intensity and add the leftover half julienne onion, the slashed red pepper and the hacked red chilies.Cook until the onions and bell pepper it becomes soft.
    •  Add the recently pre-arranged sauce to the chicken and cook over low intensity for around 10-20 minutes, adding a sprinkle of water in the event that it gets excessively thick.

       Step: 5,  COOKING RICE

    •  Meanwhile, cook the basmati rice.

     Step: 6,  SERVING

    •  Serve the chicken with the rice and some chopped fresh spring onion and coriander.

     You can get much tastier chicken if you marinate the chicken in the spices for a few hours. In this way you can leave a part of the recipe ready and take less time to make it at the time of preparation.

     You can make more of the sauce (steps 2-5) and save it for other occasions. The sauce can be frozen or vacuum packed.

     Any type of bean and other vegetables, especially root vegetables, zucchini, potatoes or broccoli, are suitable for this dish. Vegetables with green leaves do not work as well.
